Surface black versus through-dyed black
Cheaper leather is often surface-coloured — pigment sits on top of the hide. It looks black until the surface is scratched, at which point a paler layer shows through and the scratch is obvious.
Dye that penetrates further into the hide gives a deeper, flatter black, and it means a scratch exposes more black rather than a lighter core. That is the practical benefit and it is why depth of colour is worth paying attention to on black leather specifically.
