Lambskin is the softest and thinnest. It is superb on a jacket, where sleeves and shoulders give structure, and poor on a vest, where nothing does — it collapses at the armholes.
Goatskin sits in between: tougher than lambskin, with a pebbled grain, and adequate on a vest.
Cowhide is the thickest and densest through the cross-section. On a sleeveless garment that thickness is what keeps the armholes open, the front edges flat and the whole vest sitting on the body rather than hanging off it.
