Why the design stopped changing
Most garments evolve because materials improve. Aviator jackets stopped evolving because the material was already the best available for the job, and eighty years of synthetic development has not displaced it for static cold.

The construction
One sheepskin, tanned with the fleece attached. Hide outward blocks wind completely; wool inward traps a deep layer of air; there is no separate lining and no seam between shell and insulation for cold to exploit.
