Three reasons. It is the most colour-stable leather finish — dyed browns, tans and colours lighten under sustained sunlight where black holds. It hides marks: the grit and salt spray that show clearly on a tan hide are close to invisible on black. And scuffs on black leather read as sheen rather than as damage.
For a jacket you will wear through several winters and expect to look decent throughout, none of that is trivial.

Shearling is one sheepskin tanned with the fleece attached — leather outside blocking wind, wool inside trapping air, no separate lining and no seam between the two. It is the warmest construction in ordinary clothing and it has not been improved on for static cold.
